John Clay

John Clay, a 2012 graduate from ECU’s School of Hospitality Leadership is the AM Restaurant Manager of the Five-Star Rated Element 47 Restaurant at The Little Nell resort in Aspen, Colorado.  Clay’s degree in Hospitality Management Food & Beverage and a Minor in Business fully prepared him for his role as manager. He moved to Aspen in the summer of 2016 to join Element 47, drawn to The Little Nell for its “outstanding reputation in the hospitality industry.”

When he’s not rising before dawn to open the restaurant and welcome Little Nell guests for breakfast and lunch, John enjoys hiking, snowboarding and playing golf in his free time. He also plays and follows soccer, proudly claiming to be a die-hard Manchester United fan.
